Light chicken korma

Method

  1. Put the onion, garlic and ginger in a food processor and whizz to a paste. Tip the paste into a large high-sided frying pan with 3 tbsp water and cook for 5 mins. Add the korma paste and cook for a further 2 mins until aromatic.
  2. Stir the chicken into the sauce, then add the ground almonds, sultanas, stock and sugar. Give everything a good mix, then cover and simmer for 10 mins or until the chicken is cooked through.
  3. Remove the pan from the heat, stir in the yogurt and some seasoning, then scatter over the coriander and flaked almonds, if using. Serve with brown or white basmati rice.

    Made it up until the yogurt then popped into the slow cooker for a few hours due to school things cropping up and time issues. Absolutely delicious and 12 points a serving on Weight Watchers (if anyone was wondering!)

    Didn't quite turn out right, the yoghurt split when I mixed it in with the heat off. I found that 400mls of chicken stock gave to much liquid. For my next attempt I'm going to use natural yoghurt instead of low fat greek and also 300mls of chicken stock. My local Asda stocks korma paste if it can't be found in Tesco and Sainsburys

    I agree with FarmBoy74. The finished korma, although it tasted nice, was far too runny. I, too, will reduce the amount of stock if I make it again - prefer chicken passanda, though.

    Spiced it up with balti paste rather than korma paste and hot curry powder in the rice. Also, next time I'd simmer the curry without the lid to reduce the sauce a more. Otherwise, a delight!

    Very good indeed! I used the full 400ml of chicken stock but less yogurt, simply because I had a very big pot of yogurt and didn't bother to measure it out, and it was perfect. There was some left over (there are only two of us), and when reheated in the microwave the following day it was even better. Perfect to make in advance for guests.

    Absolutely the BEST curry recipe, period. Making curry at home has always been challenging and frustrating because it never tastes as good as take-away. This one was, by far, the most flavorful (but, at the same time, super healthy) curry I've ever made. You gotta love BBC GoodFood! BTW, I used a little less stock like some other reviewers said.

    Lovely dish, delicious with or without the yoghurt. I forgot to stir it in at the end of cooking and so served it separately on the table. This pleased my husband no end. He hates natural yoghurt - and consequently wolfed it down.

    Very easy recipe to do. Overall it was a really tasty curry, the only thing I didn't quite like was that mine had a slightly 'processed food/ out of a jar' after taste. I think this may be because i made the full amount of sauce but only added two chicken breasts... so I think the four tbsp of Pataks Korma Paste may have been too much. I'll make again but try less of it.
