Warm avocado salad with spicy chorizo

An easy-to-make advocado salad for a main meal that's ready in 20 minutes

Method

  1. Heat 2 tbsp of the oil in a large non-stick frying pan. Fry the ciabatta for 8-10 minutes, tossing occasionally, until starting to crisp and brown, then tip into a large salad bowl.
  2. Lay the chorizo in the pan and dry-fry for 2 minutes until it gives out a red oil. Toss in the tomatoes and cook over a high heat for 1-2 minutes until they start to soften. Drizzle over the vinegar, add the sugar and season well.
  3. MIX TOGETHER Gently toss the avocado, salad and remaining olive oil with the croutons. Spoon over the chorizo and tomatoes and drizzle with any pan juices. Serve immediately.

    An excellent salad. I wasn't too sure about the avocado and chorizo together, but I tried it and I will definetly be making it again soon. Absolutely delicious!

    Just finished eating and oh my god, can I have some more! Bought ingrediences for two portions but my boyfriend could not make it tonight so i am having the rest in cold version tomorrow for lunch! Excellent combination, very nice taste.

    Okay, admittedly I was only cooking for 1, but this only took 15 minutes! I threw the ciabatta and chorizo in together to fry. The bread soaked up loads of flavour from the chorizo but left me with no "pan juices". I got around that by adding a good splash of wine to the pan and finished cooking the tomatoes in that, so I had something to pour over the salad. Result? A seriously fast dish that was really tasty!

    Fantastic taste and so easy to make. I fried my ciabatta croutons after the chorizo in the fat that was left in the pan, which gave them more flavour and a cheerful colour. I also added a red pepper for crunch and another ingredient which I use often these days in salads; raw (yes raw), finally diced courgette!

    Dont eat bread, made a full salad and covered with chorizo and bacon pieces fried off with the chorizo - very tasty!

    Dinner party guests loved this one. I added 5-6 sliced mushrooms which I added at the same time as the tomatoes. I'd make this one again in a flash!
