Spinach & ricotta pie

A light pie of crisp pie that can be made ahead - this version has Italian cheese and soft greens

Method

  1. Heat a spray of oil in a large pan and fry the onion and garlic for 10 minutes until soft but not coloured. Add the spinach and cook for 5 minutes, stirring. Tip into a sieve and press to remove as much excess liquid as possible. Cool.
  2. Beat the egg with the ricotta and nutmeg and season. Stir in the feta with the spinach and onion. Heat the oven to 200C/fan 180C/gas 6.
  3. Spray a 20cm loose-based cake tin with a little oil. Line with the filo sheets, leaving excess pastry overhanging and spraying each sheet with oil. Spoon the cheese and spinach mixture into the tin. Bring the pastry up and over the top of the pie. Spray generously with oil. Bake for 25-30 minutes until golden brown and crisp. Serve warm or cold.

    This pie is really easy to make and tastes so good you would not believe it is healthy. The ricotta keeps the calories down and gives the filling a creamy texture. I usually find ricotta quite plain so I was generous with seasoning when mixing it with the egg and nutmeg. I didn't brush each sheet of filo with oil but did brush a little on top to make it golden. Served with new potatoes and the Greek salad recipe also from this site. We will be having the leftovers for our packed lunch tomorrow!

    This is a really tasty pie. Easy and quick to make. Even my four year old liked it. Like the above reviewer, I did not brush each sheet of filo with oil but did use oil for the top to make it crispy and golden. Not only it tastes delicious, it looks impressive too. Will be cooking this again.

    This was delicious and very easy to make, but the quantities given are not enough for 6 people, I made about 1/4 more and that was perfect

    Really delicious pie! This is the second time I've made it and it just keeps getting better and better. I don't have nutmeg and didn't use the egg and it still turned out great! Yum!

    Brilliant low cal, speedy, tasty, couldn't ask for more. Delious hot or cold. I used strained cottage cheese and a couple of tbls of grated parmesan in the mix together with a small sprinkle of cayenne. Perfect

    Really quick and easy although the end result looks quite impressive!Very tasty although I would add a bit more spinach next time. Definitely will try with salmon too!

    Absolutely delicious! Quick to make, looks really impressive, and tastes great. Quantity more likely for 4 than 6 people. I added a salmon fillet, cooked for 2 minutes in the microwave and then flaked, as my husband isn't keen on a strong spinach flavour. He loved the pie, and didn't even comment on the spinach!

    I have no cooking experience what so ever and attempted this recipe.. I had to use puff pastry instead of filo and it worked beautifully! Definitely will be making it again!

    Delicious! I halved the recipe and cooked it in a loaf tin (reduced the time to 15 mins). Served with fine green beans - so easy and tasty!

    Hmm...not that impressed. Its just "ok". My filling was too runny (even though I actually squeezed the spinach mixture and wrung out in a tea towel to remove moisture!) I also seasoned REALLY well, but tastes a bit bland. Good for low cal/fat lunch though I guess. Oh, and I sprinkled sesame seeds over the pastry before baking- adds a little something :o)

    I dont know if I would agree with some of the other reviewers that this meal is speedy - at 50 mins this doesn't constitute a fast dinner but it is very nice and worth the effort. Looks lovely, and the filling is not too runny - just right. I cooked off some sliced chestnut mushrooms with the garlic and onion to give it another dimension and that worked really well. Would make again

    There are a few similar spinach and cheese FILO pies on this site..this is the third one I've tried and by far the best. I added lots of freshly crushed black pepper and a little salt as although the feta was salty, the ricotta wasn't so I felt I needed it. It was gorgeous and everyone loved it.
