Spaghetti with chorizo & rosemary pangritata

Italian pangritata, or 'poor man's parmesan', is a mix of fried breadcrumbs and herbs used to add flavour and texture to pasta

Method

  1. Cook the spaghetti following pack instructions. Heat 2 tbsp olive oil in a pan and add the chorizo. Cook until starting to crisp up then add the chilli flakes, garlic and tomatoes. Cook until the tomatoes just start to burst. Heat another tbsp oil in pan and add the breadcrumbs. Cook stirring until they become crisp and crunchy. Add the rosemary and stir through.
  2. Drain the pasta and tip into the chorizo pan. Toss together then serve sprinkled with the rosemary pangritata.

    Tasty, but a bit bland on the whole. There was only a hint of chilli, chorizo and tomato, so next time I would amp up the flavour with more of each, a proper tomato sauce and perhaps some extra paprika.

    On the "one pan or two" issue, this recipe is in the May issue of Australian Good Food, scaled up for four people. It calls for removing the chorizo-tomato mixture to a bowl, wiping the pan clean, and doing the breadcrumbs "in the same pan." It appears someone at Aussie GF reads the comments!

    LOVE this dish - best new recipe I've tried for ages, and everyone I've made it for have loved it too. Since there seems to be some confusion around the breadcrumbs - yes, these naturally need to be done in a separate pan, or all you will get is a soggy mess. The whole point about the pangritata (apart from the lovely flavour) is to add some interesting crunchy texture to the dish. Personally I tend to do the pangritata in the oven instead rather than mess about with two frying pans - works just as well.

    Just made it, was a good mix of flavours and we particularly liked the breadcrumbs and the texture it gave, but in future would have made a few changes, like a tomato/chilli sauce before hand (with the addition of tomato puree to thicken) to stir in, the cherry tomatoes as cooked above were bland.

    Super easy, super tasty!!! We enjoyed this so much the 1st time I made it I decided it would be a perfect meal to serve up to our friends and family on our next caravanning outing. Cooking in a touring caravan is always a challenge due to the lack of space and because everything seems to take twice as long to cook in the ovens. So to find an easy dish that is big on flavour, such as this one, is always a bonus. I served this for 6 adults, both of the ladies in that group are kitchen goddesses in my opinion so the pressure was on for me to impress. They all loved it and asked for the recipe. The only thing I changed (other than using 3 times the amount of ingredients) was to add a tin of chopped tomatoes. This will be on our mid week menu�s from now on, and also will be used again next time it�s my turn to cook an evening meal when we are away with our caravanning group.

    As I love Chorizo, I was really looking forward to this dish, unfortunately I was very disappointed, as were my family, it was just too bland. Like a few others I feel the dish needs a tin of chopped tomatoes or similar for flavour, I'll probably try it again, next time I'm on my own.
