Ingredients

  • 2 tbsp vegetable oil
  • 1 egg, beaten with about 2 tbsp water
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 heaped tbsp curry powder
  • 2 tbsp tomato ketchup
  • a large handful of frozen peas (about 85g/3oz)
  • 250g leftover cold cooked rice (any type) or a 250g pouch of ready cooked rice
  • 175g cooked chicken or pork, shredded into strips
  • a good splash of soy sauce

Method

  1. Heat half the oil in a large non-stick frying pan over a highish heat. Pour in the beaten egg, swoosh it around the pan and leave it to set for a minute. Flip it over like a pancake and let it cook for a minute more on the otherside, then tip it out flat on to a plate.
  2. Heat the remaining oil in the same pan. Tip in the onion and sizzle for 3-4 minutes until it’s starting to brown, then stir in the garlic, curry powder and ketchup. Add the peas and cook for a minute or two until they start to defrost. Tip in the rice, cooked meat and a glass of water (100ml/31⁄2fl oz) and cook over a medium heat for 5-6 minutes, stirring as you go, until everything’s piping hot and the rice has taken on the colour of the curry powder.
  3. While your rice is frying, shred the omelette into long strips. Toss the omelette and soy sauce through the rice and cook for a moment more. Scoop the rice on to plates straight from the pan and serve with extra soy sauce for sprinkling over.

This is a really tasty dish to use up leftovers. I have cooked it several times to recipe and also with some easy variations. I added prawns instead of meat and it worked really well and if I am cooking rice with peas (Madhur Jaffrey recipe) I make extra as this dispenses with the need to add any more onions or peas to the recipe.

Great 'budget' meal. I had leftover goose in the freezer so used that - guess it would work with pretty much any meat or veg.
Will definitely make again.

I added toasted sesame seed oil to the recipe and it was lovely. Very easy recipe and didnt have to leave my kitchen for ingredients.

Oh this is a great meal for using up leftover meat and rice and making sure you get your veg quota. So healthy but still great. Probably should have put in the right amount of curry powder, but it was still lovely.

A cracking quick meal, i added 2 large eggs for the omelette with just 2 teaspoons of water added, this will make the omelette light.
I also substituted the curry powder for 2 heaped teaspoon of Patak's rogan josh curry paste + 3 tbsp of ketchup.

I didn't have much chicken left so added a small bowl of cooked prawns this was delicious too.

My husband isn't keen on frozen peas, so I added mushrooms to the recipe instead.

I must have done something wrong because we didn't enjoy this at all! I followed the recipe to the letter and used all the ingredients stated (except for Soy Sauce as I didn't have any) but we found the end product boring and bland. The omelette was too runny and impossible to shred and therefore the "lumps" of egg in the dish were sloppy and watery. Maybe if I was to cook this again (which I doubt I will) I'd experiment with different ingredients and use curry paste instead of powder. Don't let me put you off though...everyone else seems to think this is a winner!!

A highly enjoyable meal. Not sure about the cooking times though- had to make rice specially for the 'stir-fry'... that's an awful lot of left over rice you're supposed to have..!

A very quick and easy meal. I didn't have any tomato ketchup so used tomato puree instead and it was very tasty.

Oh forgot to say, I use a couple of tablespoons of curry paste like balti or tikka masala because I haven't found any curry powder yet.

Great recipe when you are short of time and ingredients. We have had it many times after a roast chicken on the Sunday.

Just made this for me and my partner and it was lovely better than from a chinese takeaway. I used tesco value medium curry powder, tesco value cold cooked chicken, ready made pilau rice and spring onions instead of peas. This was delicious and i will definitely be making more of it in future. Also i used 2 eggs beaten with a dash of milk. My partner loved it and wants another plateful.

I loved this so much! Such an odd (some might say 'fusion') mix of ingredients, but so easy and perfect and delicious. Like another reviewer I used madras curry paste, and also beef, instead of chicken, but I imagine any combo is worth a try. Brilliant.

Lovely! Made with leftover roast pork which was gorg - tasted like a really good, upmarket chinese!! Agree it needs more curry powder though.

Very tasty...cooked it last night. Went down a treat with me and hubby - he even asked for seconds. Think next time though I will use 2 eggs for the omelette as one just wasn't enough.
