Leanburgers with rocket & peppers

Tasty homemade burgers with extra lean mince lightened with couscous and flavoured with herbs and chilli.

Method

  1. Tip the couscous into a medium bowl, pour over 75ml/21⁄2fl oz boiling water and leave it for a few minutes to swell and absorb all the water. Add the mince, onion, dried herbs, chives and chilli powder then grind in plenty of salt and pepper. Mix thoroughly then shape into 6 oval burgers - slightly larger than the bread slices.Cover with foil and chill until ready to cook. (Can be made up to 24 hours ahead.)
  2. Preheat the grill or barbecue then cook the burgers for 5-6 minutes on each side, or more if you like them well cooked.
  3. Grill or lightly toast the slices of bread and spread with mustard. Top with the peppers, rocket and a burger and serve.

    I made these burgers last week but they fell to bits in the grill pan when I tried to turn them over to cook....There was no binding agent....did you miss out egg or something. They were an absolute disaster. Ended up scooping the bits on to a baking tray and cooking the mush that way. It was quite tasty but would have been dreadful had I been making for friends for a meal....I would rate this with 1 star.....

    This was a yummy change from the ordinary burger. We BBQ'd the burgers and had no problem with them staying together. My husband and I both loved them. It was a delicious, healthier alternative and we will definitely be making them again.

    They stayed together pretty well & I like the fact that they are healthier than normal burgers. A little light on seasoning though... despite the chilli powder they still tasted a bit bland.

    Like elizabeth I just made this burgers and when put on the BBQ they all fell apart through the grill! is there something missing in the recipe? A star for the flavour but I don't think I will be making these burgers again.

    I thought these were great - meaty and really tasty - and a decent size patty too. Didn't have any problems with them falling apart, and really enjoyed the cous cous in them. The Roasted red pepper goes really well, as does the rocket. I served with sweet potatoe wedges

  • 50g couscous
  • 500g extra lean minced beef
  • 1 small onion , finely chopped
  • 2 tsp mixed dried herbs
  • 3 tbsp chopped fresh chives
  • ¼ tsp hot chilli powder
  • 6 slices French bread (we used campagne longue, a larger version of a baguette)
  • 6 tsp Dijon mustard
  • 175g roasted red peppers from a jar, cut into large pieces (choose ones in brine, or rinse them if they're packed in oil)
  • a couple of handfuls of rocket
