Cod & tomato tray bake

Method

  1. Heat oven to 220C/200C fan/gas 7. Put the peppers, onions, tomatoes and olives into a large, deep baking tray and cook for 15 mins until they start to soften and char at the edges.
  2. Stir in the passata, butter beans and seasoning, then make 4 little areas and nestle in the cod. Return to the oven and cook for a further 15 mins until the cod is cooked through. Sprinkle over the basil and serve with crusty bread, if you like.

    Delicious, quick meal. Added a courgette for extra veg and left out the beans (method doesn't tell you when to add them!) sure this will become a favourite as both my husband and 3 year old liked it.

    Lovely, tasty, easy recipe. Ideal for a work night. I used a passata with garlic for a bit of extra flavour. Might try adding garlic cloves with the peppers and tomatoes next time.

    quick, simple, and so delicious! Made it with unsmoked haddock and added capers, a little hot paprika (pimentón), thyme and a bit of rosemary as well as the basil. Might add some chili next time for an extra kick, will def be making again.
