Turkey cacciatore with a twist

This tasty Italian cheese and tomato bake is a fab way to use up leftover meat and a true family favourite

Method

  1. Fry the onion and garlic in the oil until softened. Add the tomatoes and sugar, a little splash of vinegar and some seasoning, then simmer for 20 mins until really thick. Stir in the turkey and transfer to a baking dish. Heat oven to 220C/200C fan/gas 7.
  2. Tear over the mozzarella in chunks, then scatter over the breadcrumbs with a bit more ground pepper. Bake for 20 mins until turkey is piping hot through, and the top is golden and bubbling. Eat with mash, jackets, rice or pasta

    This was easy to make and very tasty. I made it exactly to the recipe and added some grated parmesan to the breadcrumbs for the topping. I will be making it again.

    I'm sure it is lovely (<3 the chicken cacciatore recipe elsewhere on this site), but I don't think the picture makes it look very appetizing.

    This is a really easy and tasty way to use up turkey leftovers, really delicious, and isn't too tomatoey with 3 tins, great with pasta.

    Absolutely delicious and so simple. Easily halved the recipe to make it for 2, but kept the full amount of cheese, which was needed. Now a firm favourite in my house.

    This was lovely and so easy to make. I added some chillies when I was frying the onion and garlic to give it a little kick and used worcester sauce instead of vinegar. I also mixed it with pasta as I saw an earlier comment suggesting it and I used buffalo mozzarella :)

    Delish, made this 3 times since christmas already. Used a teaspoon of chipotle chilli paste when frying onions for a bit of a kick

  • 2 small or 1 large onion , chopped
  • 2 garlic cloves , crushed
  • 3 tbsp olive oil
  • 2 tsp dried oregano
  • 3 x cans chopped tomatoes or cherry tomatoes
  • 1 tbsp sugar
