Christmas pudding trifle

Use leftover Christmas pudding to rustle up this speedy and sumptuously creamy trifle with Grand Marnier-steeped oranges

Method

  1. Peel the oranges using a sharp knife, ensuring all the pith is removed. Slice as thinly as possible and arrange over a dinner plate. Sprinkle with the demerara sugar followed by the Grand Marnier and set aside.
  2. Crumble the Christmas pudding into large pieces and scatter over the bottom of a trifle bowl. Lift the oranges onto the pudding in a layer and pour over any juices.
  3. Beat the mascarpone until smooth, then stir in the custard. Spoon the mixture over the top of the oranges.
  4. Lightly whip the cream and spoon over the custard. Sprinkle with the flaked almonds and grated chocolate. You can make this a day in advance if you like, chill until ready to serve.

    Can't wait to try this recipe! But shouldn't step 2 read, 'lift the oranges onto the crumbled christmas pudding' and not 'lift the oranges onto the custard mixture'?

    I missed out soaking the oranges in brandy, and instead just scattered some soft brown sugar on them as that was all I had, but everyone loved it! My family's not really full of Christmas pudding fans, but this was a good way of getting them all to eat it! Will be doing this again next year :)

    We never have any Christmas pudding left over as the family recipe is just too fab not to be eaten, but this looks like a very good excuse to pick up a couple of shop bought ones in the sales!

    You could use left over Christmas cake instead of Christmas pudding and I am going to use clemetines instead of oranges (4-5 clementines) as I have some that need using up! Also I have almost a full pot of creme fraiche left and so am using inplace of mascarpone as the bought custard is very sweet! Looks and sounds really yummy!

    Made for adults on Christmas Day....something different and it was lovely....very tasty and looked impressive. The custard and mascarpone topping Idea could be used again.
