Sticky apple cups

  • 2 tbsp light muscovado sugar
  • 1 tsp mixed spice
  • 1 small orange, zest and juice

  • 0% Greek yogurt or fromage frais, to serve


  1. Halve each apple through the circumference and dig out the core with a dessert spoon from both halves, leaving bowl-shaped hollows behind.

  2. Mix together all the remaining ingredients except for the orange juice and fill the apples with the mixture. Fit them into a microwaveable dish and pour the orange juice on top. Cover and cook on Medium (500w) for 5-7 mins until soft. Cool for a few mins before serving with the yogurt or fromage frais.

Lovely flavours - I made with dried figs as I had some that needed using but I found cooking them in the microwave tricky - cooking time seemed insufficient but when I extended it some apples exploded! I'm not a microwave expert so it could just be down to me! However, as a last minute Sunday lunch pudding it was a winner - could have been healthy and served with low fat yoghurt but a dribble of cream is lovely! Had some left overs so scooped out apple flesh and date mixture and topped our morning porridge with it. Yum!

So easy and quick, I've made these several times, change the filling to sultanas and chopped dried apricots and a hand full of nuts if you haven't got dates or prunes.

I omitted the prunes and served with vanilla ice cream - very quick and easy
