Self-saucing chocolate pudding

A chocoholics dream, this Australian classic creates its own sauce below the sponge in the base of the dish

Method

  1. Butter a 1 litre baking dish. Sift the flour, golden caster sugar, baking powder and cocoa with a pinch of salt into a bowl. Combine the milk, melted butter, egg and vanilla. Mix the two sets of ingredients together and add the nuts (if using). Pour the mix into the pie dish. Cover with clingfilm and put in the fridge for 4-5 hours or overnight to set.
  2. When you are ready to cook, remove the clingfilm and heat the oven to 180C/fan 160C/gas 4. Sprinkle the brown sugar and the cocoa over the pudding and pour 250ml of boiling water over the top.
  3. Put in the oven and cook for 45 minutes until puffy and firm in the centre - there will be a puddle of chocolate sauce in the base of the dish when you break the crust. Serve with cream or ice cream.

    Okay, way too sweet for me and there was a lot of very runny sauce, I have another recipe which is far better and probably won't make this one again.

    AMAZING!! I was a bit skeptical about this as its quite a strange method which I haven't come across before but it turned out perfect! Unlike the previous reviewer my sauce turned out quite thick, maybe a touch too thick, but still lovely. Its just like the posh chocolate puddings you buy in the supermarkets but miles cheaper and very easy to make. You just have to remember to prepare it at lunchtime/early afternoon so you can cook it at night. Def make again.

    This recipe is really nice and worked well for me. I didnt really understand the reason why it needed to go in the fridge for 4-5hrs as I have made chocolate self saucing puddings before and this has not been necessary. Although, Im on the hunt for a recipe to add actual chocolate to give a richer taste. But over all the recipe is great and really simple!

    Made this pudding today woooww really yummy I did reduce the Muscovado sugar to 150 grams based on two previous comments/reviews on pudding being too sweet and it worked a treat re halving the recipe there were just 3 of us and there was not a lot left!!!!!

    I didn't have time to leave the pudding to chill and it still turned out fine. If I made it again I would use light muscovado sugar in the topping instead of dark as is tasted a bit too treacly but overall it was quite good but not spectacular!
