Braised red cabbage with apples

Method

  1. Heat the oven to 200C/fan180C/gas6. Heat the butter in a heavy ovenproof pan, add the bacon and fry until just coloured. Scoop out, then layer up the red cabbage, apples, brown sugar and bacon, seasoning well as you go. Tuck in the cinnamon stick and orange peel. Put the pan over high heat and add the red wine and vinegar, bring to the boil and cook for 3-4 minutes. seal the pan with a lid, then transfer to the oven for an hour. Check a couple of times to make sure the liquid hasn't dried out and add a splash of water if needed.

    I have just eaten this. It tasted and smelss very good. I've let it in the oven a bit longer than one hour. When it came out it still has a bit of a bite. Really nice. And not difficult to prepare. I will make this again.

    This recipe is really lovely, very versatile too. I've made it without the bacon and it was still nice. Also I forgot it was in the oven once and cooked it for an extra 1/2 hour and it was still delicious!

    I adore this recipe. I have made it a number of times now and it never fails to impress. It is one of my 3 year old incredibly fussy daughters fav's. I never add the orange or cinnamon though as she is not keen but I think it works just as well without. Really delicious the next day as well

    I love this recipe! it is a family favourite. Have been serving up every Boxing Day for 7 years, since I found recipe in the Good Food "Christmas Made Easy". I prepare in advance and freeze. It reheats beautifully. Also always enjoyed when friends come for dinner.

  • 2 Granny Smith apples, cored, peeled and sliced
