Pear & walnut pudding

- Heat the oven to 180c/fan160c/gas4. Butter a dish about 20 x 15cm. rub the butter and flour together to breadcrumbs and stir in the sugar and a pinch of salt.
- Add the pears to the mixture with the walnuts. Beat the egg with the milk and stir into the rest of the ingredients, mixing to a stiff consistency, then tip into the dish and press down gently. Bake for 1 hour. serve with vanilla ice cream, custard or cream.

- 450g pears , peeled, cored and diced
- 100g walnuts , chopped
- 1 egg
- 2 tbsp milk
