Method

  1. In a mixer using the blade attachment, cream together the butter and sugar. Add the eggs, one at a time, and mix for 4 mins. Add the flour, baking powder and milk, and mix for a further 4 mins on slow, then mix in the chocolate.
  2. Heat oven to 200C/180C fan/gas 6. Cut 16 squares of baking parchment big enough to act as cases for the holes of your muffin tins. Using a piping bag or a spoon, fill the muffin cases with the mixture. When all the cases are filled, share the cherries equally between the muffins, pushing them into the mixture as you go. Bake for 25 mins, then serve warm or cold.

    I did a super-size version of these muffins using a big american-style muffin tray. Obviously they take a lot longer to cook (and need a lower temperature) and I used half plain, half self-raising flour to help them to rise. The large ones also work really well with a strawberry and white choc mix.

    These are awesome. I made a batch for work colleagues and people kept coming back for more. Heavy on the butter but all the better for it. These should not be so good for this little effort!

    These are lovely but I couldn't find the Morello cherries in a jar in our supermarket so just used a tin of black cherries and tooks the stones out. Must admit these tinned cherries did seem to lack something so next time I make them will use raspberries I think.

    Tried these today but didn't have white chocolate so added 200g of caramel chocolate instead. Worked perfectly loved them. Will definitely make them again

    Last time I baked cakes of any kind was with my Grandma about 20 years ago, if not more! This is the first time I have baked muffins, they were so easy to do and everyone loved them...Will be doing again, especially as I have a large jar of cherries to use up!

    I have been searching for ages to find Morello cherries without success and then found them in Lidl! So worth making a detour to find them!
