Method

  1. Put the potatoes in a pan of boiling water, bring back to the boil and simmer for 8-10 minutes until tender.
  2. Meanwhile, mix the pesto and oil to make a dressing. Halve the tomatoes, drain and flake the tuna. Add the beans to the potatoes for the last 3 minutes of cooking time.
  3. Drain the potatoes and beans and tip into a salad bowl. Stir in the spinach so that it wilts a little in the warmth from the vegetables. Season with salt and pepper. Scatter the tomatoes and tuna on top, drizzle with the pesto and gently toss everything together.

Tuna and pesto doesn't immediately seem like a natural combination, but it turned out to be gorgeous. I happen to really like cherry tomatoes, so I put in about twice the recommended amount.

Loved this salad! I put a little more tomatoes and pesto than the recipe said and it turned out great. I'll definitely make it again!

I modified this recipe by using slightly less ingredients and using them to fill a warm wrap. Tastes amazing!

This is a great meal - loved it. I've also substituted Knorr SK Italienische Art dressing, which tastes great.

This is a great after work meal. The potatoes and beans cooked whilst I was getting changed and then all I had to do was add the rest. It was okay cold for lunch the next day too!

Really quick and easy to make, tastes gorgeous! We left out the spinach as we didn't have any the first couple of times we made it, and I always roast the cherry tomatoes whilst the potatoes cook (I don't like them raw).

Really enjoyed this salad and have made it quite a few times. Pesto dressing is v tasty - like the idea of roasting the cherry toms. Excellent for a quick, healthy and tasty after work tea!

I'd recommend this salad to anyone as a wholesome and healthy lunch - I take it to work as it's so easy to make. I add some black olives too.

This was really tasty and even tastier the next day for lunch. Very easy to make and even the fussy eater of our family finished it off.

This is okay, but the recipe is odd - too much oil and pesto, far too many potatoes and not enough beans and tomatoes. Could do with some revision to bring out the flavours - the pesto overwhelms everything else. Also, be aware that if you don't scatter the tuna chunks over the top at the end and stir them in as the recipe suggests, the tuna will mix with the pesto and form a strange kind of paste which looks like you made a mistake. Not great.
