Fresh mint sauce

A classic accompaniment to lamb dishes - this one is from London's Tamarind restaurant and has an Indian twist

Method

  1. Tip everything except the yogurt into a food processor and blitz until smooth. Pour into a bowl and stir in the yogurt. Season with salt and keep in the fridge until ready to use.

    Made this for Christmas dinner and it is great. I don't usually like mint sauce but this is refreshing with a nice zing.

    I was taught by my cookery teacher ( in the '60's) that a recipe should contain the title of the main ingredient ie coriander and mint sauce ! ! still it is good.

  • 1 handful of fresh mint leaves
  • 1 green chilli
  • 1 small ripe mango , peeled and diced
  • ½ tsp cumin seeds
  • ½ tsp golden caster sugar
  • juice of half a lemon
  • 1 tbsp natural yogurt
