Bolo do caco

This traditional Portugese flatbread with sweet potato hails from the Madeira region and is a great side dish when served with garlic butter

Method

  1. Mix all the ingredients together with enough warm water to make a soft, kneadable dough (you'll need about 250ml). Knead, dusting with extra flour, for 10 minutes. Put in an oiled bowl, cover with clingfilm and leave in a warm place for 1 hour.
  2. Divide the mixture and shape into 8 flat rounds. Cover and leave to rise for a further 30 minutes.
  3. Heat a flat griddle or heavy frying pan and cook the bread for 8-10 minutes each side until browned and cooked through.

    I baked it in owen, not in pan as it was suggested and it took about 15-20 mins. Not really special but it is softer than a normal bread.

    Madeira it's a portuguese autonomous region, not spanish. Despite they both are latin neighbors, they are two different countries. I'm really disappointed to see such a flaw in a site like this.

    And Bolo do Caco is from a specific island from Madeira called Porto Santo.

    Madeira is part of the Portuguese archipelago islands. Nothing to do with Spain. This is no Spanish dish by ANY means. Get it right BBC
