Soft-boiled eggs with pancetta wrapped soldiers

A traditional favourite is updated with crisp, salty bacon perfect for a quick brunch or substantial family breakfast

Method

  1. Heat the oven to 200C/180C fan/gas6. Wrap pancetta slices around the soldiers then put on a non-stick baking sheet and cook for 10 minutes until the bread is golden and the pancetta is crisp.
  2. Meanwhile, add the eggs to boiling water and cook for 4 ½ minutes, for a soft-boiled egg. Drain then serve with pancetta soldiers to dunk.

    3 mins boiling water, but dont forget to make a hole with a drawing pin on the bottom of the egg, that will stop it splitting open. (I almost forgot as well, I do egg and soldiers for my son almost everyday for breakfast so got myself an egg maker its ideal for busy school day mornings).

    agree with Katie, eggs and boiling water don`t mix, cracking and leaking of the white follows! thanks for the tip about piercing shell 1st. Also timing depends on size of egg.

    My step-daughter swears by those little egg timers, the kind you set in the bottom of the pot. It denotes when your egg is ready - hard, medium or soft. I bought one the other day (at the pound shop!) but haven't tried it yet.
