Asian broth with meatballs and winter greens

This nourishing and aromatic Asian soup with minced pork will be on the table in just 30 minutes

Method

  1. Mix the pork mince, finely chopped spring onions, grated ginger, finely chopped chillies and breadcrumbs and 1/2 tsp sesame oil in a large bowl. Season really well then form into small meatballs. Brown all over in a non-stick frying pan.
  2. Put the chicken stock, star anise, sliced ginger and a good splash of soy in a large saucepan. Simmer for 5 minutes then add the kale and meatballs, then simmer for 10 minutes. Add a tsp sesame oil and the sliced spring onions and chilli. Serve in large bowls.

    Very nice soup. I was dubious as someone thought that it was bland. We had it for dinner after training and it was lovely and filling. I added short noodles to give it more substance. Will definately make again.

    Nice soup, but thought it needed an extra kick. I added some red Thai paste to the pork mixture to spice it up a bit. Also added some sliced garlic to the stock, a tablespoon of white wine vinegar and some chopped coriander. It's now awesome......

    Great hearty soup. Ideal for winter. I added rice vermicelli noodles to the broth to pad out the dish. Delicious

    Flavoursome with a bit of a kick if you add enough chilli. I also added some rice noodles to bulk it out a little - a lovely dish.
