Chilli crusted fish with green beans

Perk up fish with a pesto crust for a speedy and satisfying supper that's cheap to boot

Method

  1. Heat the oven to 200C/fan180C/gas6. Put the fish fillets on a baking tray. Season then spread the chilli pesto on each. Mix the breadcrumbs and parmesan and scatter over the fish. Bake for 10-12 minutes until the fish is cooked through and top bubbling.
  2. Cook the beans until tender then toss with a knob of butter and a squeeze of lemon. Serve with the fish and lemon wedges.

    This is a really nice dish, I didn�t have chilli pesto so I just mixed in 2 small chopped red chilli�s and mixed into the pesto. I would add slightly more breadcrumb to the mix if you want the fish to have a crispy texture. I will defiantly be making it again!

  • 2 fat fillets sustainable white fish , approx 125g each
  • 2 tbsp chilli or regular pesto (Sacla do a good chilli one)
  • 1 tbsp breadcrumbs
  • Parmesan , grated to make 1 tbsp
  • 250g green beans , trimmed
  • butter
  • 1 lemon , cut into wedges
  • crusty bread , to serve
