  • 85g golden caster sugar
  • ½ tsp vanilla extract
  • 225g plain flour
  • 75g pistachios
  • 75g dried cranberries

  1. Mix the butter, sugar and vanilla extract with a wooden spoon. stir in the flour, then tip in the pistachios and cranberries – you might need to get your hands in at this stage to bring the mix together as a dough. Halve the dough and shape each half into a log about 5cm across. Wrap in cling film, then chill for 1 hr or freeze for up to 3 months.

  2. Heat oven to 180C/160C fan/gas 4. slice the logs into 1cm-thick rounds, place on a baking tray lined with baking parchment and bake for 12-15 mins. Cool completely on the tray.

i must have made this 10 or more times, i have substituted the cranberries for dried chopped apricots, they are always demolished also i find chilling makes it difficult to cut so i do it straight away, always works for me, and they taste yummy

Yummy. As others have said possibilities are endless. My favourite is chopped orange flavored dark chocolate and almonds.

I made them with hazelnuts and chocolate chunks and they were very tasty. They wernt as crunchy as I thought they'd be (going by the photo and description), as others have said they're more like a shortbread.

These are lovely, short and crumbly, but the cranberries are chewy. The 'log' keeps well in the fridge.

Made these today with macadamia nuts, cranberries and white chocolate (Asdas own for 50p!) and they are very rich but fabulous. They are not chewy in the middle, they have more the texture of a good shortbread. Going to make them next with dark chocolate and ginger chunks! They are so convienient too as you can cook straight from the freezer!

I made these with white chocolate and coconut so therefore had to add 2 tbsp milk just to bring the mixture together slightly more. Easy to make but you do have to chill them otherwise it makes the dough to difficult to work with.

I was looking for an egg free biscuit dough, when I came across this recipe. I didn't have any pistachios or cranberries, so I put in 1 1/2 tsp of vanilla essence and 75g of ground almonds in and they were fantastic. The ground almonds gave the biscuits a really nutty crunch taste to every bite. Definitely use this biscuit recipe again.

I used frozen blueberries instead of cranberry, it was a succes too ! thank you for this cookies recipe, it's very easy to make and way too easy to eat them all !!! ^^

I was looking for a recipe I could make using the ingredients we already had in the cupboard - and I'm glad I chose this one! I substituted the cranberry and pistachio for white chocolate (like many others it seems!) I broke the pieces up into small pieces, put the dough in the freezer for an hour and a half and then cut it with a sharp knife (all as suggested by others). They didnt exactly keep their shape (party due to the little chocolate lumps) and I did have to cook them for about 17 minutes but we do love them!
