Ingredients

  • 85g semi-dried apricots, halved

  • 4 tbsp apple juice mixed with 4 tbsp water
  • large pinch mixed spice
  • 6 tbsp low-fat fromage frais or yogurt
  • 1 tbsp almond, toasted and halved

  • 1 tsp clear honey

Method

  1. Heat grill to high. Plump the apricots by simmering in apple juice and mixed spice for 5 mins. Divide them between 2 ramekin dishes. Spoon over fromage frais or yogurt. Sprinkle with toasted almonds and a drizzle of honey.

Followed the recipe but had to guess for how long to grill going by the photo and overall time (I tried it for 2 minutes). My husband liked it but I thought it tasted just like hot yoghurt. Could not find semidried apricots so found closest sounding dried apricots which were quite soft, even so, 5 minutes was not enough to soften them to my taste for this recipe. Could use fresh chopped apricot flesh simmered in amaretto with amaretti biscuits crumbled on top but i guess this wouldn't be very low calorie!
Would try again but maybe use a rhubarb compote on the bottom next time and much less time under the grill.

So presumably you stick the ramekins under the grill .......?? For how long??

sprinkling over some brown sugar before grilling greatly improves this dish

I have no idea why this recipe starts by saying heat the grill, I'd advise against it. I also topped the warm apricots with creme fraiche instead of yoghurt and it was DELICIOUS.
