  • 420g can butter beans, drained
  • 400g can kidney beans in water, drained


  1. Heat the oil in a large pan. Cook the garlic, ginger, onion, courgettes and peppers for about 5 mins until starting to soften. Add the chilli powder and cook for 1 min more.

  2. Stir in the lentils, tomato purée, tomatoes and 250ml water. Bring to the boil and cook for 15-20 mins.

  3. Add the sweetcorn and beans, and cook for a further 10 mins.

Following on from other comments I added ground cumin, cumin seeds, chilli, paprika, used a veg stock cube and put the beans in at the same time as the water. I found it made 6 portions (to be served with rice). I still felt it could be a little more flavoursome though.

T had to adapt this as I didn't have all the ingredients but I thought this was really nice served it with rice. It was easy to prepare and didn't take long.

I made this for my boyfriend and I. As a student I was looking for a fast, cheap and easy meal that would fill us both up! It was so easy to make and tasted incredible! I used the heinz 5bean tin rather than buy all the separate ones... I also used a flavour packet which worked just as well as when I made it from scratch first time. I'd allow more time than the recipe states as it takes a while to reduce down.

Perfect for freezing and reheats well !! Defiantly recommend and will be making again!

Felt quite angelic eating this. Packed full of veg and the beans filled three of us up with lots leftover.

I will read other comments for suggestions to improve flavour The chilli and tomato taste worked with veg stock. Water alone would be too bland imo.

We all agreed it was a fantastic dish and yet felt taste wise it needed something else to give it depth.

Will make again....

This is a crowd pleaser for sure, and has gone straight to the top of my partners favorite meals list!

Really lovely flavor combinations and super easy to cook. all the ingredients are so vibrant it makes you feel good about eating it. this is the perfect dish that proves you do not need meat to have a great meal.

Depending on taste i would go easy on the garlic as it can be over powering. Other then that i followed the recipe to the letter and have cooked multiple times since!

Excellent recipe, really easy and quick to make. Perfect boost when getting over flu and too exhausted to cook. Goes well with simple lamb chops or roast chicken too.

This is delicious!! So easy to make. I'm not a fan of lentils, sweetcorn or butterbeans, so added celery, mushrooms and okra instead. The okra was such a nice touch. Basically you can easily substitute veggies for the ones you like! I feel so healthy after eating this :)

This was a hit with my husband, 4 year old & baby. As you can imagine it is difficult to please them all with most recipes.
i added ground coriander, cumin & paprika as well as the chilli powder, and i also put some more veg in: tin of chick peas, celery, carrot & mushroom. It was lovely!

I followed this to the letter and really enjoyed it. If you serve it with rice then it definitely feeds more than 4 people. Will be cooking this again.

Very good. I've tried various vegetable chilli recipies and this is the best. Made the recipe exactly as written (surprised I had all the ingredients!) apart from the chilli powder. Instead of 1 tablespoon of chilli powder I used 1 teaspoon each of chilli, paprika and cumin. Easily makes enough for 6 people.

I made this at the weekend and really enjoyed it. Have taken some of the leftovers with some pitta bread for lunch. I did make a few tweaks based on the previous comments. I cooked the garlic, ginger and onion with some cumin seeds for 5 mins before adding the courgette and peppers for a further 5 mins. I then added hot chilli pepper. I used veg stock rather than water, used chopped tomatoes with chilli, kidney beans in chilli sauce and added this including the chilli sauce with the butter beans at the same time as the lentils and just added sweet corn for the last 10 mins

Fantastic! I must admit I wasn't really looking forward to this as I recently discovered steak chilli ( However, it was delicious. I altered the recipe slightly, adding cayenne pepper, hot smoked paprika, ground cumin, crushed chillis, garlic paste (as well as fresh), and some balsamic vinegar (right at the end). Just served with a sprinkling of parmesan and wholemeal pitta breads, as too tired to do the planned sweet potato wedges.

I added the beans immediately after the tomatoes, so they simmered for the full 30 minutes (thanks carluccio). I think I got 6 portions out of it, using the ingredients listed. Lovely!

Really lovely and filling. I made exactly as the recipe stated and was tasty enough I can see the addition of some paprika and cumin would really compliment it.

This is our family favourite. Delicious, filling and low in calories. Did add coriander, cumin and paprika to mine though, and used stock instead of the water.

Made this today with a few alterations - absolutely delicious. I added a couple of celery sticks in with the rest of the veg, replaced half the chilli powder with ground cumin, replaced the butter beans with black eye beans, added veg stock instead of water, and stirred through a big handful of chopped fresh coriander at the end. Worked really well, will definitely make it again. You also get a huge portion considering the relatively small amount of calories.

As kittykat stated a bit bland needs either more chilli or cumin or maybe both. Added chopped fresh coriander made no difference will see if it improves with keeping as sometimes chilli recipes do.

A bit bland to be honest. Would benefit some the addition of some cumin seeds, a teaspoon of dark brown sugar and finished with fresh coriander maybe. As it is, it's a bit boring.

This was really nice and quick and easy to make - I doubled the chilli powder as I like my chilli hot. I served it with potato wedges. This recipe serves more than 4 people - I reckon 6 at least. Will definitely make again and a godd recipe to freeze.

for extra flavour, i found it is worth adding paprika, ground cumin and crushed chillis (or a finely chopped fresh chilli with seeds) to the listed recipe. i only added 1 tin of chopped tomatoes and replaced the other with a 500g passata
