Method

  1. Heat oven to 190C/fan 170C/gas 5. Rub the flour, sugar and butter together until the mixture resembles breadcrumbs. Alternatively, you can do this in the food processor. Add enough egg to bring the mixture together to form a stiff dough.
  2. Flour your hands and shape the dough into a tube, about 5cm in diameter. Cut into 2cm-thick slices and place on a large baking sheet. Space them out as the mixture will spread when baking.
  3. Make a small indentation in the middle of each slice with the end of a wooden spoon, and drop a tsp of jam in the centre. Bake for 10-15 mins until slightly risen and just golden. Cool on a wire rack.

    These are just so YUMMY. I made two lots of these today one lot with 100g coconut and a bit extra egg and cherry on top and these are also yummy. Great for kids packed lunch

    Yummy. I made mine a bit too big, and slicing the sausage shape dough makes it difficult to get nice rounds - but think it should be fine to roll out and use cutters. Kids liked making them.

    Very easy to make and very tasty. Added coconut as others suggested. I may make them a little smaller next time as they turned out quite big - although none of the family complained!!

    I made these for an after school/work snack for my partner and stepdaughter. I didn't have a food processor, so I did it the old fashioned way and giggled like a child as I mushed through the dough. The end result was perfection, and I had a lovely nostalgic trip that has put me in a good mood all day!

    Excellent recipe. So quick and simple and so delicious. I am not always a good biscuit maker but these turn out just fine every time. I made some this week when my mother-in-law was staying and she crept to the kitchen in the middle of the night for a secret munch:)
