Simple jammy biscuits

Method

  1. Heat oven to 190C/fan 170C/gas 5. Rub the flour, sugar and butter together until the mixture resembles breadcrumbs. Alternatively, you can do this in the food processor. Add enough egg to bring the mixture together to form a stiff dough.
  2. Flour your hands and shape the dough into a tube, about 5cm in diameter. Cut into 2cm-thick slices and place on a large baking sheet. Space them out as the mixture will spread when baking.
  3. Make a small indentation in the middle of each slice with the end of a wooden spoon, and drop a tsp of jam in the centre. Bake for 10-15 mins until slightly risen and just golden. Cool on a wire rack.

    I doubled the recipe and found, like others, that the biscuits were very large as the dough spreads while cooking. I also would make a deeper hole and go for whole strawberries rather than the runny part of the jam as it becomes liquid when it cooks. I would also add some flavouring, maybe some lemon zest or vanilla extract next time - although my children and husband thought they were great as they were!

    I made them again yesterday as petits fours, by rolling out thinly and then adding an appropriate amount of jam, cooked for 8 minutes, perfect. Looked really pretty on a saucer with a cuppa and were a hit

    I have cooked these twice and both times had problems rolling the dough into a tube. Instead I roll out balls and flatten individually. However both times I've done something wrong, and the biscuits still come out lovely. So fool-proof!

    Really easy to make. A great recipe to do with kids. My little girl loved it. If I made them again though I think i'd add a splash of venilla or almond essence.

    I whipped these up when my daughter reminded me that she needed to take a plate to school to share for morning tea which I had forgotten about. They were fantastic and she said they were the first thing to get eaten. Will be making these again and again.

    I am always making this recipe, my children,7 and 3, love them as does my husband. Rather than rolling into a tube I just roll them into balls.
