Method

  1. Heat oven to 220C/fan 200C/gas 7. Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other. In a small bowl, mix the mayonnaise with the garlic paste or crushed garlic, then spread evenly over the fish.
  2. In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season to taste. Top the fish with the breadcrumb mixture. Drizzle olive oil over the fish and tomatoes, and bake for 15 mins or until the fish flakes slightly when pressed and the crust is golden and crunchy.

Making it spicy

Stir ¼ tsp mild curry powder into the mayonnaise instead of the garlic, and serve the fish with rice.

    Delicious. Am a confirmed fish and batter man, but cooked this dish the first time today for me and my wife - got plenty of Brownie points. No more chippie batter, it's not good for me!

    This was such a great dish... I added some grated parmesan to the breadcrumb / lemon / parsley mix... haven't had this dish before so don't know whether it would make a difference but it was really nice anyway! Served with home made chips and a green salad.

    ReallY nice recipe, even my fish hating husband liked it. I used Mesa sunrise cereal flakes instead of breadcrumbs and it worked.

    This was very quick and easy and loved by all, including 7yr old son who doesn't always like fish and says he doesn't like mayo! I had frozen haddock so cooked it wrapped in foil for first 15 mins then added topping and baked for last 15 mins. Will definately be making this again.

    I have made this several times and everyone loves it. I also use wholemeal breadcrumbs to make it healthier. I have served it with home-made oven chips and posh mushy peas (garden peas seasoned and mashed with crème fraiche). Perfect every time & incredibly easy!

  • 1 tbsp olive oil , plus extra
  • 4 skinless unsmoked or smoked haddock fillets, approx 140g/5oz each
  • 2 handfuls cherry tomatoes
  • 3 tbsp mayonnaise
  • 1 tsp garlic paste or 1 garlic clove, crushed
  • 100g white breadcrumbs
  • zest and juice 1 lemon
  • 2 handfuls flat-leaf parsley , leaves roughly chopped
