Choc-cherry muffins

If you’ve got a spare half-an-hour, whip up these easy muffins and freeze them for when you need them

Method

  1. Heat oven to 200C/fan 180C/gas 6 and line a 12-hole muffin tin with some paper cases. Sift the flour, and bicarbonate of soda into a large bowl, then stir in the cherries, chocolate and sugar. Add the beaten eggs, yogurt and then the butter and stir to combine. It doesn't matter if the mixture looks a bit lumpy, it's more important not to overmix or the muffins will turn out tough.
  2. Fill the paper cases and bake for 20-25 mins until risen and golden brown. Transfer to a rack to cool. They are especially delicious eaten slightly warm.

How to freeze

Pack the cold muffins in a freezer bag, seal and freeze for up to 1 month. To serve, defrost in the bag for a couple of hours then warm through on a baking sheet in an oven at 190C/fan 170C/gas 5 for 5-8 mins.

    so I'm not going to rate them this time because i am making a second batch tonight. although they tasted lovely, i only had a shallow tray (i'e Yorkshire pudding tray) and popped my muffin cases in there. they all rose...and then spread so i have muffins that look like they have been sat on. today i have bought a muffin tray (1.2 price in the orange supermarket) so will have another bash tonight. i used blue berries in mine though :)

    Great recipe, you can add whatever ingredients you like. I also added half a teaspoon of baking powder and 25g extra sugar. I only had golden caster sugar so I blended it do make it finer. Lovely and fluffy. Didn't use cherries either as used what I had, raisins.

    I've never made muffins before, nor am I much of a baker at all, aside from rare forays into bread & butter pudding or cookies. With my novice credentials stated I can say with some authority that this is a very easy recipe and on my first go produced delicious results. The only problem I had was that they didn't rise very well and looked more like cupcakes by the end. They did have that distinct muffin texture though and I'll be doing some more tomorrow so might adjust the amount of bicarb to see if I get better results.

    I made this to the recipe. It was a delight to have something that wasn't too sweet. The result was you could taste the white chocolate, the dark chocolate and the sour cherries separately. A wonderful contrast. I will make this again, and will try other dried fruits such as cranberries, as another reviewer suggests. But the sharpness of the sour cherries as opposed to the sweetness of the chocolate will be hard to beat.

    Amazing recipe!! Despite not having a muffin tray and them looking a rather interesting shape, they taste absolutely divine. Definitely worth buying good quality chocolate for. I used a mixture of dried cherries, dried cranberries and raisins... delicious!!!

    Delicious, they disappeared in moments. Next time though I would cut the chocolate into very small pieces (smaller than the half square I did this time) so as not to get all my chocolate in one bite!

    Made them this morning using dried cranberries, white and milk choc and replacing some of the flour with ground almonds and ground flaxseeds. Turned out lovely after 20 mins in the oven. Will definitely make again!!!

    Quick and easy to make. Used dried cranberries, 150g white & milk choc and replaced some of the flour with ground almonds and ground flaxseeds. Light and tasty, not too sweet. Will definitely make again!
