Spicy chicken kebabs

These fresh, spicy kebabs don’t just taste great – the whole family will enjoy making them

Method

  1. Grind the garlic, ginger, orange zest and spring onions to a paste in a food processor. Add the honey, orange juice, soy sauce and oil, then blend again. Pour the mixture over the cubed chicken and leave to marinate for at least 1 hr, but preferably overnight. Toss in the mushrooms for the last half an hour so they take on some of the flavour, too.
  2. Thread the chicken, tomatoes, mushrooms and peppers onto 20 wooden skewers, then cook on a griddle pan for 7-8 mins each side or until the chicken is thoroughly cooked and golden brown. Turn the kebabs frequently and baste with the marinade from time to time until evenly cooked. Arrange on a platter, scatter with chopped spring onion and eat with your fingers.

    These are really tasty - I used pork instead of chicken which worked well. Marinaded the meat for around 8 hours and it really took on the flavours well. Will definitely be doing this recipe again. Easy for a crowd too.

    I made this for a family buffet and everyone loved it - I just think there probably wasn't enough as people wanted seconds! A simple dish that is delicious as well - I didn't include the spring onions but I put in some other herbs instead, it worked just fine.

    I had no orange so added lime rind and juice instead plus some chopped coriander, they were great, fresh and light for our bbq.

    Very easy and tasty. I used rind of a lemon and juice of half a lemon instead of the orange, and they were delicious. Will definitely make them again with lemon.

    i used the recipe for the spicy chicken for full breasts as part as a dinner party. prepared the night before and then i cooked the chicken in a saucepan with a little bit of water and the sauce and then fried to make it really cripsy and sticky

    I have written a far more extensive note which would not be accepted at the time by the server for whatever reason so I am limiting this comment to one of complete satisfaction with the end result as well as pointing out that the quantities are also quite generous particularly when an accompanying dish is also served (basmati rice with saffron in my case).
