Gnocchi with mushrooms, spinach & poached egg

Method

  1. Cook the gnocchi in boiling salted water following pack instructions then drain well.
  2. Heat a frying pan and add half the butter. Tip in the mushrooms, season, then fry on a high heat for 3-4 minutes or until golden. Add the garlic, then toss for a few seconds until fragrant.
  3. Add the gnocchi to the mushroom pan with the spinach and the rest of the butter. Toss together over the heat until the spinach wilts. Season. Serve topped with a poached egg.

    Really filling. Poached egg is a great addition. Also a few parmesan shavings are good to serve it with too.

    I stired in some creme fraiche at the end instead of using a poached egg and it was delicious!

    This is a beautiful recipe and one of the fastest things I've ever made. The three seperate stages come together nicely timing-wise, and all the ingredients compliment each other really well. I'll make sure the egg yolks are still runny as they would make for a good impromptu 'sauce' when burst. Will definitely make again when craving something simple and healthy on rushed weeknights.

    This really was a tasty meal, however I have rather weak guts and the Gnocchi was too rich for me and made me I'll for about an hour afterwards. However if I'm honest I will still have it again thanks
