Mini cauli cheese with leeks

These mini pots of comfort are bound to be a hit with kids, and they're ready in 15 minutes too

Method

  1. Bring a pan of water to the boil, cook the cauliflowers until tender, drain well then transfer to 4 individual ovenproof dishes.
  2. Meanwhile heat the oil in a non-stick frying pan, add the leeks and cook over a medium heat for 10 minutes until meltingly soft. Stir the flour and mustard powder into the leeks then cook for a few seconds.
  3. Gradually pour in the milk and stir continuously until smooth. Add half the parmesan and simmer until melted into the sauce. Spoon over the cauliflower. Scatter with the rest of the parmesan then grill for 5 minutes until golden and bubbling.

    Sounds yummy - I do EITHER cauli cheese or leeks in a cheese sauce with the Sunday Roast - this weekend I am going to try this. I like the way the roux is made too, in same pan as leeks (saves on washing up!)

    I wasn't hugely impressed with this one. I think I should have cooked the leeks longer than the 10 minutes stated in the recipe. May have been better if they were "meltingly soft". Overall, not keen on the taste or texture of this dish.

    Was really yummy. I added a bit of butter to cook the leeks in and some smoked bacon. Not much can't be improved with bacon and butter. Very yummy.
