Sage & onion toad-in-the-hole

Method

  1. Heat oven to 220C/fan 200C/gas 7. Put the sausages and onion wedges into an ovenproof baking dish, drizzle over oil then cook for 25 minutes until everything is turning brown.
  2. Meanwhile put the flour in a bowl, whisk in the egg and milk to make a smooth batter then stir in the chopped sage. Pour into the hot dish then cook for another 30 minutes until crisp and golden.

    YUM!!! this was absolutely delicious. The batter was lovely and light and the hint of sage elevated it from regular pub food to a lovely meal. I served with caramelised onion and red wine gravy and it went down a treat.
