Soda bread

Really, really easy - give this a try if you've never made bread before

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Mix the flours, bicarb and salt in a bowl. Add the buttermilk, then stir to form a dough. Knead briefly then form into a ball. Put on a floured baking sheet then slash a cross in the top.
  2. Bake for 30-40 minutes until it sounds hollow when you tap on the bottom.

    First time I've made bread! Didn't work exactly to plan but was not a bad effort. Next time I'd use less salt as it is rather salty with the recommended amount

    Wow, I love soda bread, and I had no idea making it was so quick and easy! Made this yesterday, and the result was delicious :) If you're lactose intolerant or vegan: I replaced the buttermilk with oatmilk mixed with a tbs of apple cider vinegar, which worked very well. I used a cake tin, I think the dough would have been a bit too wet to shape into a loaf, so if you're using a non-dairy replacement for the buttermilk you might want to reduce the amount a little.

    Added approx 50g of Spelt Wholemeal flour Added extra 50g of S.R. Wholemeal flour Used 1 teaspoon of Salt Used only 100g white flour Added 2 tablespoons of Medium Ground Oatmeal This is the loaf I prefer, it has a 'nutty flavour', due to the Spelt flour & addition of Oatmeal. The crust is crunchier and a slightly 'denser' loaf, however it's down to personal taste. I only eat Soda Bread now, I love it. Try it.....so easy, tasty and alter to individual taste.

    I use half buttermilk and half water - not so much as to make the dough wet! I also add pine nuts and sunflour seeds - makes it really nice. I never add salt - can't see why it needs it!

    I f you haven't got buttermilk you can use low fat plain yougart. I usually use this as I always have some in the fridge and it works just as well. Do not be put off if it seems rather wet, it will be fine. Use floured hands to shape it. I bake mine in a floured tray and lightly flour the top after cutting. Very good..

    Made exactly as per recipe. Dough was too wet to work so I added a little more flour. Baked for an extra 10 minutes too. Finished loaf was WAY TOO SALTY. Excessive. Almost inedible. The texture was excellent though. I would make it again but omit the salt completely, the bicarb makes it salty enough.

    A fab and easy recipe. I used some of the recommendations in the comments so far - added no salt and used low fat natural yogurt (250ml) instead of buttermilk. Delicious and healthy!

    Just made this, it came out the oven 20 minutes ago. Used yoghurt instead of buttermilk. It is simply delicious, warm with a little butter and ardennes pate!
