Chargrilled chicken with mojo sauce

Method

  1. Make a cut into the chicken breast horizontally and open out like a book - bash gently to flatten a little. Griddle (chargrill) for 2-3 minutes on each side. Whisk 2 tbsp olive oil, garlic, cumin, orange and lime juice and zest, season and stir in the parsley.
  2. Serve the chicken with the mojo sauce and potatoes.

    I like how quick and convenient this was but I'm not convinced by the sauce. I'm not a fan of massively citrus-y sauces but this just tasted like spicy Tropicana on a chicken breast. I'll use the tip of halving and flattening the chicken and chargrilling it again but the sauce I'll happily repress from my memories. Please. If I can.

    I bought the ingredients for this on the weekend and was a bit worried when I saw the review for it yesterday. I decided to change the sauce up a bit, desperate not to make 'spicy tropicana'. I added more garlic, a teaspoon of red wine vinegar,one red chilli, smoked paprika (i put loads- dont think you can have enough paprika!), bit of chilli powder and half a lemon instead of the lime. First I fried the garlic with chilli and the cumin seeds and then added the mixture to the juice zest and red wine vinegar. I dont have the means to chargrill so I just fried the chicken for about 10 mins and added the mojo sauce to the frying pan for the last 2 mins. It was really delicious, fresh, filling but not fattening- and I will definately make this again.

    Really liked this recipe. I did add a splash of balsamic but I tend to do that with everything.
