Cold weather hotpot

This recipe stretches a pack of mince brilliantly - and is perfect eaten straight from the bowl with a spoon

Method

  1. Cut each onion into eight wedges. Roughly chop the carrots and cut the potatoes into large chunks. Put the kettle on.
  2. Heat a large non-stick pan, add the mince and fry quickly, stirring all the time, until evenly browned. Crumble in the stock cubes and mix well. Add the prepared vegetables, stir them around, then pour in 900ml/11⁄2 pints of hot water from the kettle. Bring to the boil.
  3. Reduce the heat, cover and simmer for 25-30 minutes, until the veg are tender. Stir in the baked beans and a generous splash of Worcestershire sauce and heat through. Taste and add salt and pepper if necessary.
  4. Scatter over the parsley, then ladle the hotpot into bowls. Put the Worcestershire sauce bottle on the table in case anyone fancies a bit more spice.

    Love it - so simple yet so tasty. I leave out the potatoes and add peas/green beans and serve with creamy mash for extra indulgence.

    Big hit for a easy to cook meal. Added some mixed herbs and a little left over passata to add flaviour. Served with crusty brown rolls hot from the oven. Really tasty and quick - family agreed for it to go on the camping food menu.

    Very easy to make and even better the second time round when the flavours had mingled! My husband (very fussy eater) loved it. Will definitely make it again but will add more Worcestershire sauce next time.

    We had this for supper tonight and it was delicious. We used all our own vegetables and mopped up the gravy with homemade wholemeal bread. Quick to prepare and I then put it in the oven (Everhot) for the day.

    A lot of people have found this dish a bit runny. Why not try taking out a few of the carrots and potatoes, mashing them up together and then returning them to the pot? This will give a thicker gravy without changing the taste.

    I made a huge pot of this to freeze, for when we move house. Added a big squirt of tomato puree, & a glug of mushroom ketchup for depth of flavour. Tastes great - looking forward to it!!

    I made this at the weekend and really enjoyed it. I had read the comment about calling it cowboy stew and thought this would appeal to the kids, it did but unfortunatley it did not entice my youngest to eat the veg in it!

    i made this dish and loved it so easy to make and a tasty dish , i cooked mine the put it in the slow cooker for later tasted great, i did put some cornflour in to slightly thicken , but its a good dish alround my 4 year old loved it!

    quick and easy to make and easy to adapt to your own taste. i added leeks and peas as i only had a small amount of mince. good way of using up veggies. was yummy even made with low quality frozen mince!!

    This was the first time I've done anything to call a 'hotpot' and it was great tasting for a pretty easy dish to make :) I used 750kg new potatoes and some thinly sliced celery with the veg at the start, frying it for a bit to soften. I crumbled a beef OXO cube over the meat and veg and used two Knorr stock pots, one beef one veg, when the water went in. I added a couple of mushrooms with 10 mins to go, and the beans 5 mins to go, and as another commenter said, stirred in some gravy granules at the end. The result was quite a meaty taste but the veg still had flavour and its lovely to put together when home from work on a colder day. I'd definitely make it again and probably try making my own dumplings to go with next time!
