Cold weather hotpot

This recipe stretches a pack of mince brilliantly - and is perfect eaten straight from the bowl with a spoon

Method

  1. Cut each onion into eight wedges. Roughly chop the carrots and cut the potatoes into large chunks. Put the kettle on.
  2. Heat a large non-stick pan, add the mince and fry quickly, stirring all the time, until evenly browned. Crumble in the stock cubes and mix well. Add the prepared vegetables, stir them around, then pour in 900ml/11⁄2 pints of hot water from the kettle. Bring to the boil.
  3. Reduce the heat, cover and simmer for 25-30 minutes, until the veg are tender. Stir in the baked beans and a generous splash of Worcestershire sauce and heat through. Taste and add salt and pepper if necessary.
  4. Scatter over the parsley, then ladle the hotpot into bowls. Put the Worcestershire sauce bottle on the table in case anyone fancies a bit more spice.

    i really loved this, its such a warming dish, great comfort food. we had it with warm crusty bread. it's great as well because you can chuck such a variety of veg in there. i would say it would serve 4 but thats probably because we like big portions in our house!

    We found this bland and too watery, disappointing having followed the recipe closely. Even the reheated leftovers were not much improved, whereas with many dishes the flavours mingle and intensify overnight.

    This is one of my favourite recipes, its cheap, quick and tasty. My partner always goes back for seconds! After reading the comments I am going to make this with dumplings next time!

    I have made this a couple of times. The first time my daughter complained about the onions so this time I grated the onions which helped thicken up the sauce a little I did also use some gravy to help thicken it up a bit. No complaints this time just empty plates. Very yummy

    This is a delicious and simple meal, we really enjoyed it! I can recommend adding a chilli. If it looks too thin, just cook it a little longer, the potatoes will start to break down, and will thicken it. Great comfort food!

    This was much nicer than I expected - only cooked it because I wanted to use up some ingredients that matched the recipe. I used celery in addition to the other veg and had a quick taste whilst it was cooking - it was a bit wishy washy so I added half a tin of chopped toms and a dollop of tomato puree. Lovely with our home made bread, will definitely cook again!

    I have made this several times now and it's always a popular dish with the whole family and very economical. I always add chilli and garlic with the onion and any root veg i have at the time. Delicious.

    I left the lid off it for too long so most of the juice was absorbed, but man was it good. I overcooked it a little too so it was all slushy. Perfect with a bread roll. My flatmate loved it too :) I tried to do it in the oven as my pots were too small to cook it all at once, but it didn't really cook as well.

    Made this for tea tonight and it went down very well. Prepared it all and left it simmering nicely while I went out for a run. By the time I got back in from my run it was ready to dish up. We added kidney beans rather than baked beans and some gravy granules to thicken it up. Will definitely make this again. Easy mid week meal. Very tasty.

    Bland, flavourless rubbish. Good if all you eat is processed rubbish I'm sure but for us the worst thing we have ever cooked. I can't believe it made it to the magazine.
