Cold weather hotpot

This recipe stretches a pack of mince brilliantly - and is perfect eaten straight from the bowl with a spoon

Method

  1. Cut each onion into eight wedges. Roughly chop the carrots and cut the potatoes into large chunks. Put the kettle on.
  2. Heat a large non-stick pan, add the mince and fry quickly, stirring all the time, until evenly browned. Crumble in the stock cubes and mix well. Add the prepared vegetables, stir them around, then pour in 900ml/11⁄2 pints of hot water from the kettle. Bring to the boil.
  3. Reduce the heat, cover and simmer for 25-30 minutes, until the veg are tender. Stir in the baked beans and a generous splash of Worcestershire sauce and heat through. Taste and add salt and pepper if necessary.
  4. Scatter over the parsley, then ladle the hotpot into bowls. Put the Worcestershire sauce bottle on the table in case anyone fancies a bit more spice.

    Didn't look that appetisiing, but tasted great. Added some dice swede. Omitted the worcester sauce when cooking, just added individually. Serving with fresh crusty bread is a must.

    Yummy Yummy Yummy!! the whole family loved it even my 8 year old who moans about onions didn't bother picking them out. Would definately make again especially on a cold day. Next time going to fill a giant Yorkshire Pudding a change for sunday lunch...

    A keeper. I've made this probably a half dozen times now, both as written and with minor variations (adding frozen petit pois, parsnips, swede, etc). My husband and three teenage stepsons love it ... and it is very, very easy.

    extremely easy to make. a real winner with my family. simple ingredients that i already had and worcester sauce gave it that little kick. i also crumbled 2 stock cubes in instead of 1. really delicious.

    I was a bit worried about it cos it looked a bit watery when I was serving it up, more like a soup really. However it was really yummy and filling. Even my husband (who is extremely picky!) ate it all and asked for more, so just because of that I will definitely be making it again!!

    Made some modifications by halving the amount of potatoes and added other root vegetables instead of all thoses potatoes.(My husband said there was still too many spuds when we had it for our supper)I put everything into my slow cooker with one stock cube and half the amount of water .It was very tasty but will make yet more modifications next time.

    A lazy cottage pie with beans, my children really liked it served with crusty bread. Trying it again replacing Beans with Herbs, Swede & Peas. Was reaaly quick and cheap.

    this is a great midweek meal for all the family, my son loves it and has it as in the recipe, but for the adults i add some red chilli's to warm it up a bit more!! i also add bisto or corn flour to thicken a little. this also works in the slow cooker, even easier!!!

    I made this dish for friends and left out the beans, but added turnip and dumplings and served it in a giant yorkshire pud. This went down a treat, will definatley be doing this again.

    My boyfriend and I made this on Saturday, without making any changes to the recipe and it was wonderful! We had it with buttered crusty bread too; simply delicious and we'll be making it again!

    Good and simple - I agree with others though who say that it needs a bit of thickening. Used a dessertspoon of cornflour. Also only used 1 stock cube to reduce the salt a little.
