Roast chicken with 40 cloves of garlic
Roasting the garlic in the chicken juices makes it creamy, soft and mellow

Ready in 1 hour and 40 minutes
- Heat the oven to 200C/fan 180C/gas 6. Rub the chicken all over with oil and season really well inside and out. Put the thyme and half the lemon slices inside the bird with a few garlic cloves. Put the rest of the garlic and lemon slices on the bottom of a baking dish with the wine or water. Sit the chicken on top and roast for 1 1/2 hours until golden and cooked through.
- Rest for 20 minutes under foil then serve the chicken with the garlic and strained juices from the tin.
