Roast chicken with 40 cloves of garlic

Roasting the garlic in the chicken juices makes it creamy, soft and mellow

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Rub the chicken all over with oil and season really well inside and out. Put the thyme and half the lemon slices inside the bird with a few garlic cloves. Put the rest of the garlic and lemon slices on the bottom of a baking dish with the wine or water. Sit the chicken on top and roast for 1 1/2 hours until golden and cooked through.
  2. Rest for 20 minutes under foil then serve the chicken with the garlic and strained juices from the tin.

    The combination of chicken wine garlic and lemon tasted amazing. I opted for wine instead of water but it evaporated too quickly so had to eventually add water. There was no juices as end result either so ideally water is added along with the wine.

    Fantastically tasty and virtually idiot-proof. The lemon was tangy without being overpowering, and the garlic cooks down to a delicious savoury slush. You'll need to top up the juices with more wine or water a couple of times during cooking, to stop the garlic becoming too caramelized. Turning the bird onto its breast for the 20 mins or so really makes a difference in keeping the meat lovely and moist.
