olive's paella

A spectacular crowd-pleasing dish - serve from a huge paella pan for extra impact

Method

  1. Cook the chicken in a little oil in a large, wide frying pan or paella pan until browned all over. Scoop out and add the chorizo and pancetta and cook until crisp at the edges. Add the onion, garlic and pepper and cook until softened, then add back the chicken with the green beans. Stir in the paprika and cook for a minute then add the rice and stir to coat. Pour in the chicken stock, put on a tight lid or cover with foil and cook for 15-20 minutes until rice is just tender.
  2. Sit the prawns and mussels on top and keep cooking for a few more minutes with the lid on until the mussels are open and prawns are cooked through. Stir in the parsley and serve with lemon wedges.

    This was my first attempt at making a paella, and I have to say that it was the easiest and tastiest meal I have made in a long time. The recipe was easy to follow and the flavours mouth watering. I have made it since a couple of times for diner parties and on both occassions impressed my friends who absolutely loved it. A fool proof recipe well done Olive.

    Fantastic, easy and delicious. I cheated and used some frozen mussels that I bought in a garlic butter sauce that added a little bit more juice, yum!

    Superb--I used frozen mussels and large cooked prawns, so you only need a minute at the end to scatter them over so they heat but do not cook. Even managed to get some socarrat on the bottom of the pan---the 'holy grail' of good Paella's

    Big hit for dinner last night! Even a thumbs up from the son who hates rice. Did't have green beans, pancetta or mussels, used fresh peas from my garden and it was still really good! Now in my family's top 10 Dinners.

    This was so tasty and very easy to make. Only reason I didnt give 5 stars was I thought the chorizo overpowered the dish somewhat, apart from that gorgoeus. Has gone into the favourites.

    Made this dish for the first time for friends, it was amazing, everyone loved it! Only problem was my pan wasn't big enough and i didnt want to spend money on a new pan if the paella wasnt worth doing again so I'll definately be investing in a traditional paella pan for the next time! It was also a little on the spicy side. Can only put that down to smoked paprika?? I followed recipe correctly.

    Made this last night for a big family dinner, and it went down a storm! My dad even rang this morning to tell me again how lovely it was!! Very simple to do, and was able to get it ready to a point in advance - I stopped before putting the cooked chicken etc back in. Then just before we had our starter (tapas!) I carried on with the recipe - timed just right! And was so delicious! Will now be a firm family regular!

    I used this recipe as the basis for a Paella I made last night, along with another recipe from the Epicurius iPad app and my boyfriend said it was the best paella he'd ever had! I found it took much more than 20 minutes for the rice to cook but the end result was great - really tasty :-)

    I made an edited version of this ie. used turkey breasts (as I had them) and I didnt have the pancetta. I did however add some dried chilli's and it was delicious and really easy to make. Really easy and very tasty.

    Fantastic! Had no red pepper so omitted them, used frozen peas instead of the green beans, and ground paprika instead of smoked. Used a bad of frozen mixed seafood (mussels, squid and prawns) and added frozen king prawns for finishing touch! DELICIOUS!!!

    I make this when I have a party, I have tweeked it a little.( taken out the sea food could not afford it ) added 2 green chillies, seeds taken out, People always ask me to make it for their party too. Very tasty
