Risotto Milanese

There's no need to throw the contents of the fridge at this very simple risotto - let the saffron flavour shine

Method

  1. Bring the stock to a bare simmer.
  2. Melt half the butter in a pan then cook the onion gently until softened but not coloured (about 5 minutes). Add the rice and stir, then add the wine. Let it evaporate completely then add the saffron. Pour in the stock, a ladleful or 2 at a time, stirring and scraping the rice from the bottom of the pan as you do so. When each addition of stock has almost evaporated, add the next ladleful.
  3. This should take about 15-17 minutes. The risotto is ready when the grains are soft, but still al dente. Beat in the remaining butter and some seasoning, then beat in the parmesan. Scatter with parmesan shavings.

    This was very nice and I will be making it again. I added some chicken when I fried the onions to give the dish a bit more bulk and it worked very well. Only thing I would say to watch is what stock you use, the one I used was high in salt and made the dish a bit salty for me.

    Of course you should make your own stock, but that takes time. I usually cheat a bit by adding a bit more wine and making use of whatever else I cook with it. Better than pre-made gunk. This is the traditional accompaniment to Osso Buco, but other rich, Mediterranean, 'meat casseroles' could substitute, e.g. chicken cacciatore.

    Gorgeous, did the recipe as described using homemade chicken stock and it was lovely. Served it with the osso bucco and would definitely do it again. But it was lovely on it's own too.
