Chinese duck with pancakes
The ultimate sharing starter to kick off a Chinese meal

- Heat the oven to 150C/fan 130C/gas 2. Mix the marinade ingredients in a bowl. trim or pull away any fat from the inside of the duck, then prick all over with a skewer. Put on a rack over a large roasting tin and pour over a kettleful of boiling water. Discard the water, then put the duck back on its rack and tray and cook for 2 hours.
- Turn up the oven to 190C/fan 170C/gas 5 and roast the duck for 10 minutes, then brush with the marinade and cook for another 10 minutes. Brush again and put back for 5-10 minutes until glazed. Rest before carving and serving with the usual accompaniments.

- pancakes (buy from Chinatown fresh or frozen)
