Chinese duck with pancakes

Method

  1. Heat the oven to 150C/fan 130C/gas 2. Mix the marinade ingredients in a bowl. trim or pull away any fat from the inside of the duck, then prick all over with a skewer. Put on a rack over a large roasting tin and pour over a kettleful of boiling water. Discard the water, then put the duck back on its rack and tray and cook for 2 hours.
  2. Turn up the oven to 190C/fan 170C/gas 5 and roast the duck for 10 minutes, then brush with the marinade and cook for another 10 minutes. Brush again and put back for 5-10 minutes until glazed. Rest before carving and serving with the usual accompaniments.

    Me and my boyfriend actually made the pancakes for this. Extremely difficult but really fun if you fancy the challenge. The duck is delicious :-)
