Ursula's muffins

This is a great staple to have in your fridge, it means you can always have fresh muffins whenever you want them.

Method

  1. Beat the eggs and oil together until creamy
  2. Then mix together with all the other ingredients And leave overnight in the fridge
  3. Pre-heat oven to 180C/fan 160C/gas 6
  4. line a 12 hole muffin tin with muffin cups and spoon in the mixture until the cups are almost full
  5. Bake for 15-20 minutes or until lightly browned and cooked through
  6. This mixture makes more than 12 muffins at a time and can be kept in the fridge for up to 6 weeks. Make fresh muffins every day!

    makes more than 12 and is great for breakfast every morning. A good alternative is cubes of banana rather than raisins or choc chip.

Ingredients

  • 4 eggs
  • 3/4 cup vegetable oil
  • 1/2 cup brown sugar
  • 4 cups all bran flakes
  • 5 cups plain flour
  • 1 tsp vanilla
  • 250g raisins or sultanas or chocolate chips
  • 4 cups milk ( or 2 cups milk and 2 cups buttermilk)
  • 5 tsp bicarbonate of soda
  • 1 tsp salt
