Ursula's muffins
This is a great staple to have in your fridge, it means you can always have fresh muffins whenever you want them.

Overnight storage in the fridge
- Beat the eggs and oil together until creamy
- Then mix together with all the other ingredients And leave overnight in the fridge
- Pre-heat oven to 180C/fan 160C/gas 6
- line a 12 hole muffin tin with muffin cups and spoon in the mixture until the cups are almost full
- Bake for 15-20 minutes or until lightly browned and cooked through
- This mixture makes more than 12 muffins at a time and can be kept in the fridge for up to 6 weeks. Make fresh muffins every day!
