Method

  1. The day before you want to serve this dish, cut the leeks from top to root and wash thoroughly under cold running water. Thinly slice them on the diagonal and put into plastic bags and chill until ready to cook.

  2. To serve, put a large pan over a medium heat, add the butter and let it melt over the base of the pan. Add the leeks and plenty of seasoning and stir to coat in the butter. Turn the heat down to low, cover the pan and cook the leeks gently for about 15 minutes, stirring half way through until they are tender. Serve with extra butter and a sprinkling of thyme leaves.

These are simple and delicious although I couldn't see the point in making it a 2 day process...

Excellent recipe. Hardest part is cleaning the leeks but the rest is a breeze. Dried thyme at the start of cooking works just as well.

I also considered celery, and I will probably try that at another time. I wanted it to be traditional, since I was taking it to a Burns Night potluck. I used white pepper and a modest amount of thyme. It was great!

A delicious way to serve leeks. I grow my own and am always looking for ways to serve them. Who would have thought one of the lovliest would also be the most simple.

This is the first time I've had leeks cooked this way and they were beautiful! Whats more my other half and 21 month old enjoyed them too! Will be doing this one a lot more!

I am always looking for something to do with the green parts of leeks, which many recipes say to cut off and discard, so I tried this.

I made a much smaller batch, and added 1 teaspoon of "fond de vollaile" (chicken soup flavoring) for 400 grams of leeks, and it was fantastic! Has been added to the general rotation. Yum!
