Haddock baked with roasted peppers & feta

Method

  1. Heat the oven to 200C/fan180C/gas6. Rub the fish with a tiny bit of the oil and paprika, and season. Mix 1 tbsp of olive oil with the garlic, breadcrumbs, parsley and some seasoning. Put the fish in a baking dish and divide the peppers, breadcrumbs and feta over each fillet.
  2. Bake the fish for 15 minutes and serve with salad.

    quite bland without a bit of lime juice. the toppings did not go well with the haddock. i would have preferred the haddock with some seasoning and sauce. somewhat mismatch recipe.

    Quick, easy and absolutely delicious. Perfect for lunch or a light summer dinner. I substituted roasted peppers from a jar with fresh red peppers and it was fine. I served it with lightly steamed asparagus and the two went together very well.

    I used Ciabatta bread and added the zest and juice of 1/2 lemon, also a spash of white wine, we needed some ciabatta to mop up the juices. :-) It was yummy, my wife said she didnt know cod could taste so good.

    Easy to do, quick to cook and very tasty and is a good way of eating fish without it being overpowering because all the other ingredients come through more. I added plum tomatoes and will also add some fresh chilli next time to help further enhance the paprika.

    Changed this a bit by adding a layer of sliced courgette on the bottom of the dish and then two chopped tomatoes and a bit of chorizo. Made it quite Mediterranean and plenty as a meal on its own. Will definitely be making again.

    My family though this was one of the best fish dishes. I had to adapt it a bit. I used hake because I could not find cod or unsmoked haddock. I roasted fresh red peppers, skinned and chopped them and added a bit of balsamic. I put a layer of thinly sliced tomatoes under the breadcrumb, feta and pepper mix, and drizzled a tablespoon of olive oil over the top when it came out of the oven.

    really nice dish, i have made this many times now, although the ingredients have evolved. I now include Black pitted olives, garlic and mozerella instead of the feta. I also leave out the Bread but serve with sweet potato mash. The whole family love it.

    i slightly adapted the recipe but this is now one of our favourites; it was really nice! I roasted the peppers myself and used cod which i rolled in parma ham before putting it in the oven; we had it with chargrilled courgette and garlic and it was really lovely and filling and so easy to do!! thanks for the great idea :)

    This is truly delicious and my whole family enjoyed it....even those that claim to dislike fish! I added lemon juice and a splash of balsamic vinegar and some tomatoes cooked with some caramelised red onions. I also popped in some olives and Italian seasoning and instead of sour dough I crumbled some cheese scones which needed using up on the top with some cheese.
