Haddock baked with roasted peppers & feta

Method

  1. Heat the oven to 200C/fan180C/gas6. Rub the fish with a tiny bit of the oil and paprika, and season. Mix 1 tbsp of olive oil with the garlic, breadcrumbs, parsley and some seasoning. Put the fish in a baking dish and divide the peppers, breadcrumbs and feta over each fillet.
  2. Bake the fish for 15 minutes and serve with salad.

    Used ordinary breadcrumbs and curly parsley from the garden. Thought this was absolutely delicious and planning to make small individual versions as a starter when our friends come round in a few weeks. Highly recommended.

    We enjoyed this, but did think that it was a little dry and I would be tempted to add a tin of chopped tomatoes next time to make it a bit more saucy..... I served it with garlic & rosemary potato slices and green salad.

    It will take a bit more time, but try to roast the peppers yourself, take the skin of and drizzle them with a bit of balsamic vinegar. It worked for us. I took the advice of Belkey and added chopped up fresh tomatoes. Made them a layer between the fish and the bread crumbs. The only think I will do differently next time, is that I will sprinkle some lemon juice on the fish, together with the olive oil and the seasoning. Big hit in this house which I love because we - here in Nova Scotia - have such wonderful seafood and such beautiful haddock. I am always happy to find new recipes to work with this beautiful fish. Thanks!

    Very nice and easy!I also used cherry tomatoes and olives. I don't know sourdough bread, so I used bread I had in the house. Other things I used were a few cappers & anchovies.

    Quick, absolutely delicious and low fat too. Can't complain!! Used smoked haddock, but kept everything else the same and served with a very simple salad. Impressed with the amount of flavour. Another winner. Thanks Good Food :)

    I am always skeptical of low-fat recipes, because there are so many bad, tasteless ones out there. This one, however, is tops. Delicious, easy, fine as is, and also stands up well to improvisation. The second time I made, I added capers which worked well. I plan to make this again and again.

  • 600g haddock or cod, cut into 4 pieces - look for fish from a sustainable source
  • olive oil
  • ½ tsp paprika
  • 1 garlic clove , chopped
  • 2 slices sourdough bread , chopped into rough crumbs
  • 2 tbsp flat-leaf parsley , chopped
  • 100g roasted peppers from a jar, drained and chopped
  • 50g feta cheese , crumbled
  • salad , to serve
