Italian stew with borlotti beans & sausage

A speedy sausage supper that comes in under 350 calories

Method

  1. Roll the sausagemeat into little balls. Heat a non-stick frying pan sprayed or brushed with oil and brown the meatballs until golden and any oil is released. Remove the sausage and add the onion, garlic and fennel seeds to the pan, along with the chilli flakes and some seasoning. Cook for 5 minutes and then add the cherry tomatoes with 300ml water or stock. Bring to a simmer and add the beans and meatballs.
  2. Cook for 10 minutes and then add the green beans. Cook for another 5 minutes until beans are just tender, then serve.

    For such a simple dish, this was rather tasty. Despite a few false starts (a tin of black eyed peas mislabelled as borlotti beans!) it's a very quick recipe with a good mix of flavours and textures. It's also quite useful for using up those bits and bobs of veg - I've substituted the green beans with asparagus or mange tout and it still comes out nice. I do think two sausages between two for a main meal is a little tight though.

    Very delicious - I love the flavour of the fennel. Quite small servings though - it was stretched between two adults and three children.

    Delicious! I used three Toulouse sausages from the butchers and it was just the right amount.... The fennel seeds and chilli were great. I used ordinary tinned tomatoes as I had them in the house already. Will definitely repeat this recipe.

    I've just eaten this and it was lovely. I didn't have any fennel or green beans so left those out, but added mushrooms and peas. The chilli flakes really add to the flavour

    Didn't have any fennel and used chorizo instead of sausage. I added a chilli and substituted borlotti with haricot beans - and served it with roast potatoes, boiled with rosemary and coated in cayenne. It worked really well.

    Another winner! What an easy delicious meal, in jig time really! Used a tin of Aldi's Mixed Beans (including borlotti, chick peas et al) - even better!! Served with basmati rice, just occurs to me you could use cumin seeds instead of fennel seeds for a somewhat asian slant! Now, where's the coconut milk....?
