Watercress & goat's cheese risotto

- Soften the onion in butter, then stir in the rice with a splash of white wine. Once the wine has evaporated, gradually ladle in the hot stock, stirring between each addition, until the rice is tender.
- Stir in the chopped watercress and goat's cheese, a good knob of butter and some seasoning and leave to sit for a minute before serving.
