Chicken, porcini & spelt stew

Method

  1. Fry the chicken in 1 tbsp olive oil until browned, then add the onion and garlic and cook for a few minutes until softened. Add the porcini, soaking water, spelt and stock. Simmer for 20-25 minutes until the spelt is cooked but still nutty.
  2. Stir in the parsley, season and serve.

    As a basic receipe, this was very good. However I the second time I added some extra veg; leak, few frozen peas and some carrots. Also more garlic than suggested.

    This is such a simple dish and so easy on the washing up (or so my husband says). Served it with some crusty bread - delicious. Will definitely be doing this one again.

    Very easy to prepare, very easy to cook, very tasty! Even my 7-year old son, who's a very fussy eater enjoyed this! Will definitely do this again.

    alice4991 try 'ebly' you can get this in most supermarkets. if you have a waitrose near you try in there as they normally have things like this too

    Tried this last night and was worried that it might be a bit bland but it was really lovely. I couldn't find spelt in Sainsbury's so used a mixed bean and pearl barley mix. Also added a couple of leeks and some creme fraiche as it was a bit runny due to not having the spelt to thicken it up.
