Thai spiced turkey patties with noodle salad

Method

  1. Heat the grill to Medium. Put the turkey in a food processor and pulse until minced. Add the lemongrass, garlic and lime zest, and half the soy sauce, coriander and chilli, then pulse again until combined. Tip the mix into a bowl and add some black pepper. Shape into 8 patties, then transfer to a non-stick baking tray and grill for 3-4 mins each side, until cooked through.
  2. Meanwhile, soak the noodles following pack instructions, then drain and add the vegetables, the remaining soy sauce and the lime juice. Toss well, divide between plates and sprinkle with the remaining coriander and chilli. Serve with the turkey patties and some sweet chilli sauce for dipping, if you like.

    The turkey patties were lovely, and held together well under the grill. I used minced turkey rather than doing it myself. The noodle/stir-fry combo could have done with some extra flavour though - maybe some garlic-ginger paste? Whole family ate this- always something of a triumph.

    The grilling didn't quite work for me, so finished the patties off in a fry-ing pan. Taste-wise it was very nice though.

    I love thai flavours and this recipe did not disappoint. Lovely and fresh, healthy too. You definitely need the sweet chilli sauce with it, to avoid the overall meal being to dry. Am hoping to make this again next week!

    I had some turkey mince I had to use, so decided this was exactly what I wanted to use it for, something quite light and asian flavours. It was a delicious dish, but found that the patties were quite dry. I later remembered that Turkey meat being so lean, does tend to be quite dry. Next time I might save my turkey mince for smaller turkey balls in asian soups which I've done before where you dont notice the dryness so much. I did enjoy this none the less and do recommend giving it a try, however as previous comments said, do accompany it with dipping sauce to counteract the dryness of the patties.

    Made this the other day and it was gorgeous, completely agree with it being dry but the flavours were amazing and a very healthy dish too, goes to show you can eat tasty dishes and be healthy too :)

    I have made this recipe several times now and its a firm favourite for a simple midweek supper. I do play around with the seasoning ingredients depending on whether we fancy extra spice or more garlic etc. Every time its been a winner. Give it a go :-)

    I like to replace Chilli sauce with Mango Chutney. I bake the patties in the oven instead of frying and maybe add some vegetables (e.g. half a carrot or 1/4 zucchini) to add more moisture.

    A delicious meal! I used ready-minced turkey and added ginger and dried chilli flakes to the pattie mix as I'm a spice lover. I griddled the patties which worked really well - lovely flavour on the outside but nice and moist inside. I've got a couple left in the freezer that were left over and I'm looking forward to eating them!

  • 400g turkey breast or fillet, roughly chopped
